We use the time honored south Louisiana two pot cooking method which results in the flavor penetrating throughout the mud bug. First, we select the best crawfish available and clean them thoroughly. Next, we submerge them in a boiling pot brimming with Cajun herbs and spices. Last, we soak them in a second pot to absorb an even more intense batch of seasonings and spices, and a generous amount of cayenne pepper.
